Dreaming about returning to her beloved homeland of Ghana and inspired by the vast bounty of natural ingredients growing abundantly in Ghana’s lush climate and fertile soil, Michelin trained Executive Chef Ruby Paintsil, started this new chapter in her life by opening Chapter One restaurant at Villa Monticello Boutique Hotel in Accra, GHANA.

These sumptuous ingredients that make their way onto the menu at Chapter One, often picked from their very own rooftop garden, create an emotional landscape of culinary ‘conversion pieces.’

Her passion for her staff, whom she calls her VIP’s,  is evident and her vision to transform the hospitality industry by empowering young people in the industry is inspiring.

The kitchen at Chapter One is powered by passion, creativity, a Josper grill, ‘the Chef’s Rolls Royce’ and a love for creating unique culinary experiences, ‘something that is very familiar but it’s brilliantly done.

Food is so emotional, literally and I think you need a different way to eat it, a different environment, it makes a conversation piece interesting and that is what at Chapter One, we are all about, something different.
